how to open a closed path (eg: a square)

i have created an object (eg: a square) using the pen tool. then i thought of creating another shape by altering the square. but the paths are closed. how to open it again? instead of using the undo action is there any solutions? because if i save my artwork, then next time i open it, and i want to change the shape of the closed path object, the undo history all are gone. i am left to no choice but to create a new object.

There are two things that I can think of right now:

1. Create the other part of the shape separately and then use the Pathfinder to merge them.

2. Use the Knife Tool (if you don't know this tool yet refer to the Help file as it is a rather tricky one).
