1. It is zoomed in so it fits the screen. Press Ctrl + 0 for for the normal size (100%) and Ctrl + 1 for screen fit.
2. What's inside the border is your workspace. That's more of a reference for printing.
The document is always white. You'll have to manually change the color by created an object filled with grey.
3. I'm not sure, it might have to do with dpi, but that's something that I never figured out (nor had to).

Illustrator is NOT Photoshop. Forget what you know about overall Photoshop appearance. That seems to be your biggest hurdle.
1 Illustrator opens all pages to fit in screen. Illustrator uses pages. Every document has a page size. Page sizes are based upon standard printing sizes - 8.5x11, 8.5x14, 11x17 - or based on standard web dimensions - 800x600, 1024x768. The documents open to show you the full page. Zoom in or out to alter the percentage at which the page is displayed.
2. Illustrator works with an artboard and a workspace. The art board is the size of the page determined in the document set up. This area is designated by a black rectangular stroke in the illustrator window. Everything which falls inside this rule will print. Objects outside of this rule will fall off the printed page. If you are not concerned about printable area then simply turn off the artboard indicator by choosing "Hide Artboard" fromt eh View menu. No, there is no way for you to alter the color of the workspace that falls outside of the artboard. Here again, Illustrator is not Photoshop and you should not think of the documents in the same terms. Photoshop deals with pixel and does not care about dimensions until you actually print a document. Illustrator deals with vectors and is designed to primarily be concerned with print dimensions first.
3. See answer #2 as well. Illustrator is set up to deal with documents in standard print sizes. It does not recalculate document boundaries based upon clipboard contents. It assume you'll want to print your file so it sets up all documents to be standard sizes.
Reviewing the basic help topics and user's guide may help a great deal.
