Preparing my Freehand document for the printers

Hi

I am designing a tri-fold brochure using Freehand MX. I need some advice/tips on preparing the document before I send it to the printers.

I want to make my colours pantone colours but I don't know how to do this (naming them), I also have a few graphics on the brochure do I need to do anyting with those.

I know that I have to convert my text to outlines etc.

Any help would be much appreciated.
