gradient conversions

Im starting to get more skilled in converting a photo into a vector image...but im not really able to get the the right color transistion... ive tried to use a gradient for my colors but it does not have a right effect....

im using photoshop cs can it be done with ps or do i really need to use illustrator...if so, how???
