xhtml?
So I just completed a new site, and i was completely able to lay it out in css w/o a single table. Now i've been hearing a lot of about xhtml and how great it is, but i still havn't quite found a good explaination of it, and what exactly is so great about it. Could anyone help me out, or direct me to somewhere that could?

w3.org isn't really a site known to explain things in the most simple ways but I think that page should do the trick if you take some time to look over it and read the interesting parts.

XHTML is basically an XML-based implementation of HTML. They are relatively the same except for a few extra things in the header (to make it validate) as well as small niggly things in the tags.
Just for example in HTML writing the <br> tag or <img src=""> are fine by themselves, but in XHTML all tags must either have an ending tag </img>, or the single tag must be a self contained tag, such as <br/> or <img src=""/>
I hope that made sense...
But yea you should read up more about it, there are a number of similiar differences.

Knowing XHTML is a good way to prepare for the future of integration among Web languages (XML, XHTML, SVG, CSS, etc.), but its actual use is not necessary right now. IE can't handle XHTML properly, but you could always code HTML-compatible XHTML. That way, IE doesn't throw too much of a fit, if any fits at all.

i.e cant handle CSS properly....
and xhtml is just a more strict html, thats the way i see it. but its better so all browsers can render things more alike.
and if you use it with css, then the page loads much quicker.
