Path and mesh gradient

If I use a path to create a complicate shape (like apple), then I apply mesh gradient, I found difficult to do it as the line of mesh is really unformat and cant be distributed well. What ways can I avoid this problem?

There's a tutorial at the Adobe Expert Center on how to use the Gradient Mesh tool properly.
You can also try using different styles, blending layers, etc. to achieve the desired effect.
